Spicy Sausage Cheddar Chili Queso Dip Recipe


  • 1 pound (or 450g) ground pork
  • 2 medium tomatoes, diced
  • 1 medium red bell pepper, seeded and diced
  • 2 small green chili peppers, seeded and diced
  • 1 jalapeno pepper, seeded and minced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons flour
  • 2 cups whole milk
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon ground sage
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon fennel seed
  • 1 teaspoon paprika
  • 1 teaspoons salt
  • 1 teaspoon pepper
  • 2 1/2 cups shredded cheddar cheese
  • 1 (8 oz) package cream cheese
  • additional salt and pepper to taste
  • diced green onions for garnish (optional)
  • Dippers for servings (i.e. tortilla chips, toasted bread slices, potato chips, pretzels, or veggies)


  1. In a large skillet, cook the pork, breaking into pieces as it cooks, until fully browned. Remove from heat and use a slotted spoon to remove the meat to a separate dish, set aside for a moment.
  2. Add the tomatoes, peppers, onion, and garlic to the same pan and cook for 2 to 3 minutes until softened and fragrant. Whisk together the milk and flour in a small glass or bowl until completely smooth, then pour into pan and reduce heat to low. Add the spices, salt, and pepper and stir constantly until the sauce begins to thicken.
  3. Add the cream cheese and cheddar and continue stirring over lowest heat until evenly melted and creamy. Season to taste with more salt and pepper to taste and if desired top with green onions.
